Will any 18v power supply do? The one I want to use is a HEC UA100 AC adapter. Will that work?
A well filtered power supply is always best. Typical "wall wart" adapters are not well filtered or well rectified.
Google for DC power supply circuit ideas, there are a ton of them out there that will work nicely.

The wall wart that came with my AMT-3000 is marked "18 VAC 500 mA 25 W".
Almost any wall wart with ratings near this will work. The AMT-3000 draws considerably less than 500 mA. The device has onboard rectification and filtering so nothing special is required from the supply other than approximately 18 V.
The supply you cited should work but it is over rated for what is needed.
