Just noticed this on ebay - anyone have experience with it?
I had it backward: unbalanced to balanced, and just picked it up from weird stuff.. This will be pretty cool since I can now use consumer grade stuff to connect up to my board.

It's hidden at the bottom of the body copy, but this is also a stereo-to-mono summer. You won't get a stereo signal out of a single male XLR.
If your intent is to remain in stereo, this might not be the doodad for you. But this is ideal for a newsroom setup, offloading audio from a (non-USB) portable recorder into the house system.
(for the tinkerer) If you have any really old PC dialup modem cards back in the junk drawer, many will have a tiny transformer for isolating the phone line and keeping ring voltage off the card. Cannibalize one of those transformers and make your own XLR balanced adapter. The Z might be off by a fistful of ohms, but it works.
Your suggestion about salvaged transformers from modem cards is a good one. These are designed for 600 to 900 ohm impedance so this should not be a problem. They can be used for balanced to single ended conversion and ground loop isolation.
