It's been years since I did an alignment on a tape deck but I recall some things which can be checked with an alignment tape: speed, wow, flutter, and head azimuth.
Head azimuth was adjusted by using a recorded 10 kHz tape and adjusting for maximum output. Lacking such a tape I found that this adjustment could be done pretty well by listening to a commercially recorded tape and adjusting for the best highs in music. The azimuth adjustment is fairly sensitive so it is not too hard to find the best setting.
For checking wow and flutter, music with sustained tones such as a slow piano piece can be used. Speed adjustment is not so easy without a tape and frequency counter but if you have good music pitch perception you can set it "by ear". Hope this helps in case you don't find your tape.
